repent & believe

last year lent turned into life changes...unless caught in a weak moment or 5 star meal you still won't find me eating potatoes or fried food...you can however find me still cuddled up on the couch knitting and needlepointing instead of working out or blogging and playing on facebook instead of doing my daily devotional.

ashes have been imposed and the day is still young...until Easter i am committing myself to [with my followers as my witness] the following....
  • walk 30 minutes with joe & wilson at least three times a week...this can include wine and ugg boots but must be done together [rain or shine]
  • daily devotional of some sort...of the 10 books i own i need to commit to read at least something in each daily...Jesus Today, Jesus Lives, One Thousand Gifts, Devotions of a Sacred Marriage, PRUMC lent devotional...the list of choices goes on and on and on...no excuses
  • for my health...no fast food in atlanta...good luck with this one right? 
Prayer for the day from PRUMC this am...Overturn our love of worldly possessions and fix our hearts more firmly on you, that having nothing, we may yet possess everything, a treasure stored up for us in Heaven.

my fave mac & cheese

here is my favorite homemade mac & cheese recipe ever! 

what you need...

2 Tbsp Corn starch
1 tsp salt
1/2 tsp dry mustard
1/4 tsp pepper
2 1/2 cups milk
2 Tbsp butter
2 cups (8oz) shredded cheese
8 oz elbows, cooked 5 minutes and drained

what to do...In medium saucepan combine first 4 ingredients; stir in milk. Add butter; stirring constantly, bring to a boil over medium-high heat and boil one minute.  

Remove from heat. Stir in 1 3/4 cups cheese until melted. Add elbows. Pour into greased 2 qt casserole. Sprinkle with remaining cheese.  Bake uncovered in 375 degree oven 25 minutes. Makes 4-6 servings


Trick is not to over cook the noodles! Might take more then 5 minutes, but DO NOT cook them till they are soft.  If you do not constantly stir when the milk is boiling it will burn aka taste bad.
