in a despearte attempt for dinner to be ready in time for joe earlier this week when rain allowed me to be home from tennis i frantically scurried around Trader Joe's thinking what can i possibly make for dinner?!?!
Boom...who knew they had great [& i really mean it] pre-marinated chicken, lamb, and pork!? I grabbed pesto first of course and figured that would be hard to screw up but i do want to go back for the peppered lamb tips! i'm not one to get these for freezing but i think that it makes a great quick dinner! also, it was reasonably priced at only $5.99/lb compared to their normal chicken price of $5.29/lb at our Trader Joe's...more than normal chicken elsewhere, but worth it in a rush!

what you need...
Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Add sliced jalepenos or other toppings that you want to be cooked. Bake for 20 minutes or until cheese is melted and gooey. Scoop up or with additional chips or into tortillas if desired.
what you need...
2 ounces Tortilla Chips (about 24), plus additional for serving
1 Tbs Chili Oil (or olive oil and red pepper flakes)
1 Onion, chopped
2 cloves Garlic, minced
1 pound Ground Chicken
2 Tbs Taco Seasoning
1 can Black Beans, drained
1 cup Hot Salsa
1 cup shredded Reduced Fat Cheddar Cheese
what you do...Heat oven to 350. Heat oil in a large skillet. Add the onion and garlic and sautee until soft. Add meat and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.

BBQ Meatloaf

what you need...
1-1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 cup ketchup
bbq sauce of choice (i used Robert Rothschild Farms Hot Pepper Raspberry Chipotle Sauce)
what to do...
Preheat oven to 350 degrees F. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1 cup ketchup. Form this mixture into a loaf and place it in a shallow pan. Pour bbq sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.
