joy to the world!




its officially after thanksgiving so we can now all listen to christmas music and put up decorations without getting nasty looks from people!  i think everyone has that one song that gives them chill bumps when you sing it at church on christmas eve or in the car on the way to work...for me the second joy to the world starts playing my tone deaf self starts singing! normally i get some weird looks from people [sid] when i start belting it out but it is by far my favorite christmas song ever [tied with 12 days of christmas if you do the special e.joye dance]....

to davis family thanksgiving i brought my mother's [mueller pasta box] home made mac and cheese--it tastes so much better when she makes it so thats just what i had her do before we left for highlands on wednesday am! 

mac & cheese (amazing!)
what you need...
2 tbsp corn starch
1 tsp salt
½ tsp dry mustard
¼ tsp pepper
2½ cups milk
2 tbsp butter
2 cups shredded cheese
8 oz elbows, cooked 5 minutes and drained

what to do...
In medium saucepan combine first 4 ingredients; stir in milk. Add butter; stirring constantly, bring to a boil over medium-high heat and boil one minute
Remove from heat. Stir in 1¾ cups cheese until melted. Add elbows. Pour into greased 2 qt casserole. Sprinkle with remaining cheese.  Bake uncovered in 375 degree oven 25 minutes.

Trick is not to over cook the noodles! Might take more then 5 minutes, but DO NOT cook them till they are soft.  Also milk burns if you don't stir it constantly! It will taste burnt if you don't watch it!
